What does the Ar symbol mean on certain Sinn dials?

The "Ar" symbol indicates that Sinn has injected one or more inert gasses into the watch case.

This gas is injected into the watch case once production is completed, and help to create a dry, corrosion-free environment.  In most Sinn watches that feature inert gas, a copper sulphate capsule is also used to absorb humidity and moisture.

There are a number of Sinn watches that feature this technology.
